  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, smashed
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 1 cup low-sodium beef broth

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the beef roast dry with paper towels; season generously with salt and pepper. Rub olive oil all over the roast.
  3. In an oven-safe skillet over medium-high heat, sear the roast for about 4-5 minutes on each side until browned.
  4. Add smashed garlic, thyme, and rosemary around the roast in the skillet.
  5. Transfer the skillet to the oven and roast for about 15-20 minutes until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Let the roast rest for at least 15 minutes before carving and serving with beef broth drizzled on top.
