  • 2 cups shredded rotisserie chicken
  • 8 (10-inch) flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • ½ cup sour cream
  • 2 green onions, chopped (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. Shred the rotisserie chicken into bite-sized pieces using two forks.
  3. In a large bowl, mix the chicken with half of the Monterey Jack cheese and half of the enchilada sauce until well combined.
  4. Spread some enchilada sauce on the bottom of the baking dish to prevent sticking. Fill each tortilla with about three tablespoons of the chicken mixture, roll it up tightly, and place it seam-side down in the dish.
  5. Pour any remaining enchilada sauce over the rolled tortillas and sprinkle with the rest of the cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden brown. Drizzle with sour cream before serving.
