  • 14 oz firm tofu, pressed and cubed
  • 2 cups fresh green beans, trimmed
  • 2 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced

Instructions

  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, mix soy sauce, ginger, garlic, and brown sugar. Add tofu cubes and marinate while preparing green beans.
  3. Heat sesame oil in a skillet over medium-high heat; sauté the green beans for about 4 minutes until tender-crisp.
  4. Add marinated tofu to the skillet and cook for about 8 minutes until golden brown, stirring occasionally.
  5. Combine everything in the skillet, tossing to coat with any remaining marinade.
  6. Serve hot, garnished with sesame seeds or scallions if desired.
