  • 6 large flour tortillas
  • 8 large eggs
  • 8 oz cooked bacon or sausage
  • 1 cup diced bell peppers (mix of red and green)
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick spray.
  2. Cook bacon or sausage in a skillet over medium heat until crispy. Remove and chop into bite-sized pieces.
  3. In the same skillet, sauté onion and bell peppers until softened, about 5 minutes.
  4. Whisk eggs with salt and pepper in a bowl. Pour into the skillet and scramble until just set.
