Description

  • 1 lb raw shrimp, peeled and deveined
  • 1 cup white rice (jasmine or basmati)
  • 1 cup bell peppers (mixed colors), sliced
  • 1 medium avocado, sliced
  • 2 tbsp lime juice (freshly squeezed)
  • ½ cup sour cream
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Rinse rice under cold water until it runs clear. Cook according to package instructions.
  2. In a bowl, combine shrimp with lime juice, chili powder, salt, and pepper. Let marinate for 15 minutes.
  3. Heat olive oil in a skillet over medium heat. Sauté bell peppers until tender-crisp (about 5 minutes).
  4. Push veggies to one side and add marinated shrimp. Cook for 3-4 minutes until shrimp are pink and opaque.
  5. Assemble bowls with cooked rice as the base, topped with sautéed veggies and shrimp. Add avocado slices.
  6. Drizzle sour cream over the top and serve immediately.
