- 1 cup bell peppers (mixed colors), sliced
- 1 medium avocado, sliced

- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Rinse rice under cold water until it runs clear. Cook according to package instructions.
- In a bowl, combine shrimp with lime juice, chili powder, salt, and pepper. Let marinate for 15 minutes.
