  • 1 cup mixed dried fruit (raisins, currants, sultanas)
  • 8 oz marzipan
  • 1 cup ground almonds
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup unsalted butter (softened)
  • 4 large eggs
  • 1/2 cup honey or golden syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Cream together softened butter and honey until fluffy.
  3. Gradually add eggs, mixing well after each addition.
  4. Fold in sifted flour, ground almonds, mixed dried fruit, cinnamon, and nutmeg until just combined.
  5. Pour batter into the prepared pan and bake for 45-55 minutes or until a toothpick comes out clean.
