  • 1 cup sour cream
  • 12 oz egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Prep by chopping onions and garlic; slice mushrooms.
  2. In a skillet, sear the beef chuck roast over medium-high heat until browned on all sides (about 5 minutes per side). Remove from heat.
  3. Sauté onions and garlic in the same skillet until translucent (3-4 minutes).
  4. Transfer beef to the slow cooker along with sautéed onions and garlic. Add sliced mushrooms, beef broth, salt, pepper, and paprika.
  5. Cover and cook on low for 7 hours or high for 4 hours until the beef is fork-tender.
  6. Stir in sour cream just before serving.
  7. Serve over cooked egg noodles tossed in olive oil.
