  • 34 lbs chuck roast
  • 1 cup whole berry cranberry sauce
  • 2 medium onions, sliced
  • 1 cup low-sodium beef broth
  • 4 garlic cloves, minced
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 tbsp low-sodium soy sauce

Instructions

  1. Season the chuck roast generously with salt and pepper. Optionally, sear in a skillet over medium-high heat for 3-4 minutes per side.
  2. Place sliced onions at the bottom of the slow cooker. Add the seared roast on top, followed by cranberry sauce, garlic, and thyme.
  3. Pour beef broth and soy sauce around the roast.
  4. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  5. Serve with mashed potatoes or crusty bread, drizzled with remaining sauce.
