  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 2 cups fresh spinach
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup orzo pasta
  • 1 cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic and sun-dried tomatoes, and measuring broth and cream.
  2. Sear chicken breasts in a skillet over medium heat for 3-4 minutes per side until golden brown.
  3. In the slow cooker, add seared chicken, garlic, sun-dried tomatoes, spinach, broth, cream, Italian seasoning, salt, and pepper.
  4. Cook on low for 6 hours or high for 3 hours until the chicken is tender and shreddable.
  5. Stir in uncooked orzo about 15 minutes before serving; allow to cook until tender.
  6. Add Parmesan cheese until melted; serve hot with extra cheese if desired.
