Ingredients

  • 45 lbs bone-in leg of lamb
  • 6 garlic cloves, minced
  • 3 sprigs fresh rosemary (or 1 tbsp dried)
  • 1 cup dry red wine
  • 1 cup low-sodium beef broth
  • 1 tsp salt (adjust to taste)
  • 1 tsp black pepper (adjust to taste)
  • Juice of 1 lemon
  • 2 tbsp Dijon mustard

Instructions

  1. In a bowl, mix garlic, rosemary, lemon juice, Dijon mustard, salt, and pepper to create the marinade.
  2. Pat the leg of lamb dry and rub the marinade generously over it.
  3. (Optional) Sear the lamb in a hot skillet with olive oil until golden brown on all sides.
  4. Place the lamb in the slow cooker and pour in red wine and beef broth.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until tender (internal temperature should reach at least 145°F).
  6. Let rest before slicing; serve with cooking juices drizzled on top.
