  • 2 pounds beef chuck roast
  • 3 medium carrots, chopped
  • 2 medium Yukon gold potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp dried thyme

Instructions

  1. Chop all vegetables (carrots, potatoes, onion) and mince the garlic.
  2. In a skillet over medium-high heat, sear the beef chuck roast on all sides until browned.
