  • 2 cloves fresh garlic, minced
  • 4 cups mixed greens (romaine lettuce and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1 cup corn (fresh or canned)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 red onion, thinly sliced
  • 1/4 cup freshly squeezed lime juice
  • 3 tbsp olive oil
  • 1 tsp chipotle powder
  • Salt and pepper to taste

Instructions

  1. Preheat grill or stovetop pan over medium-high heat.
  2. Season chicken breasts with salt, pepper, and minced garlic.
  3. Grill chicken for 6–7 minutes per side until golden brown and cooked through; let rest before slicing.
  4. In a large bowl, combine mixed greens, cherry tomatoes, avocado, corn, black beans, and red onion.
  5. In a small bowl, whisk together lime juice, olive oil, chipotle powder; season to taste.
  6. Slice grilled chicken and add to the veggie mix; drizzle with dressing and toss gently.
  7. Serve immediately on plates or in bowls.
