  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 cup fresh corn, off the cob or canned
  • 2 medium tomatoes, diced
  • 1/2 cup red onion, finely diced
  • 1 cup bell peppers (any color), diced
  • 1 ripe avocado, chopped
  • 2 tbsp freshly squeezed lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse and drain black beans and pinto beans.
  2. Chop tomatoes, red onion, bell peppers, and avocado into bite-sized pieces.
  3. In a large bowl, combine black beans, pinto beans, corn, tomatoes, onion, bell peppers, and cilantro. Toss gently.
  4. Squeeze lime juice over the salad and stir until well coated.
  5. Fold in avocado just before serving to maintain its texture.
  6. Serve chilled or at room temperature.
