- 2 cloves fresh garlic, minced
- 1 cup bell peppers, chopped (red or green)
- 1/2 cup sliced jalapeños (remove seeds for milder flavor)
- 1 cup shredded sharp cheddar cheese
- 4 large flour tortillas
- 2 tsp olive oil
Instructions
- Dice chicken breasts into bite-sized pieces. Mince garlic and chop bell peppers.
- Heat olive oil in a skillet over medium heat. Add chicken and season with salt, pepper, cumin, and paprika. Cook until browned and cooked through (6-8 minutes).
- Add bell peppers and jalapeños to the skillet; sauté until tender (3-4 minutes).
- In another skillet, place one tortilla down and sprinkle half with cheese. Add a scoop of the chicken mixture on top and fold.
- Cook each side until golden brown and cheese is melted (3-4 minutes per side).
- Cut into wedges and serve hot with salsa or guacamole.
