  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup bell peppers, chopped (red or green)
  • 1/2 cup sliced jalapeños (remove seeds for milder flavor)
  • 1 cup shredded sharp cheddar cheese
  • 4 large flour tortillas
  • 2 tsp olive oil

Instructions

  1. Dice chicken breasts into bite-sized pieces. Mince garlic and chop bell peppers.
  2. Heat olive oil in a skillet over medium heat. Add chicken and season with salt, pepper, cumin, and paprika. Cook until browned and cooked through (6-8 minutes).
  3. Add bell peppers and jalapeños to the skillet; sauté until tender (3-4 minutes).
  4. In another skillet, place one tortilla down and sprinkle half with cheese. Add a scoop of the chicken mixture on top and fold.
  5. Cook each side until golden brown and cheese is melted (3-4 minutes per side).
  6. Cut into wedges and serve hot with salsa or guacamole.
