- 1–2 tbsp Sriracha sauce (to taste)
- 1 cup low-sodium vegetable broth
- 2 green onions, sliced (for garnish)
- 1 tbsp toasted sesame oil
Instructions
- Prepare the ramen noodles according to the package instructions. Drain and rinse under cold water; set aside.
- In a medium bowl, whisk together peanut butter, soy sauce, vegetable broth, garlic, ginger, and Sriracha until smooth.
- In a large skillet over medium heat, heat sesame oil and sauté mushrooms for 5-7 minutes until golden brown.
- Add the cooked noodles to the skillet with mushrooms and pour the peanut sauce over all ingredients. Toss gently until well coated and heated through (2-3 minutes).
