- 2 stalks celery, diced
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 tsp dried oregano
- ½ tsp red pepper flakes (adjust to taste)
- Fresh basil for garnish
Instructions
- In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add garlic for the last minute.
- Stir in carrots and celery; cook until softened (about another 5 minutes).
- Add diced tomatoes with their juices and vegetable broth; stir well.
- Sprinkle in oregano and red pepper flakes. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
- Taste and adjust seasoning if needed. Just before serving, stir in chopped basil.
- Ladle into bowls and garnish with extra basil if desired.
