  2. Finely chop the mint leaves and thinly slice the red onion.
  3. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  4. In a large bowl, combine peas, chopped mint, sliced onion, and feta (if using). Drizzle with dressing and gently toss to coat.
  5. Serve immediately garnished with additional mint leaves.
