Ingredients

  • 1 lb beef chuck roast, cut into 1-inch cubes
  • 2 cups russet or Yukon Gold potatoes, diced
  • 1 cup carrots, chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the potatoes, carrots, onions, and mince the garlic.
  2. In a large pot over medium-high heat, heat olive oil and brown the beef on all sides.
  3. Remove beef; sauté onions until golden, then add garlic until fragrant.
  4. Return beef to the pot; add potatoes, carrots, thyme, bay leaf, and broth. Bring to a boil.
  5. Reduce heat to low; simmer for about an hour until everything is tender.
  6. Season with salt and pepper before serving hot with crusty bread.
