  • 1 lb flank or sirloin steak, cut into bite-sized pieces
  • 1 cup pepper jack queso cheese
  • 1 cup jasmine rice, cooked
  • 1 cup bell peppers, diced (any color)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp lime juice
  • 2 tbsp olive oil

Instructions

  1. Prep ingredients by chopping steak, bell peppers, onion, and mincing garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté onions and bell peppers for about 5-7 minutes until softened.
  3. Increase heat to medium-high. Add steak seasoned with salt, pepper, cumin, and chili powder; sear for about 4-5 minutes.
  4. Stir in cooked rice and chicken broth (or water) until combined; let simmer for about 10 minutes.
  5. Reduce heat to low; add queso cheese and stir until melted (2-3 minutes).
  6. Finish with lime juice and cilantro on top before serving.
