Description

  • 1 cup Medjool dates, pitted and chopped
  • 1 cup all-purpose flour, sifted
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1/2 cup heavy cream (for sauce)
  • 3/4 cup dark brown sugar (for sauce)
  • 1 tsp vanilla extract (for sauce)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Soak the chopped dates in boiling water for 15 minutes.
  3. In a bowl, cream together butter and light brown sugar until fluffy. Add eggs one at a time.
  4. Gradually fold in the flour followed by the soaked dates and their liquid.
  5. Pour batter into the prepared dish and bake for 30-35 minutes or until a toothpick comes out clean.
  6. For the sauce, combine heavy cream, dark brown sugar, and vanilla in a saucepan over medium heat until bubbling.
  7. Serve warm pudding drizzled with the toffee sauce.
