  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup brut champagne
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tbsp cornstarch
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and sugar, then add cold butter until crumbly. Press mixture into a tart pan and prick with a fork. Bake for 20 minutes until golden.
  2. While the crust cools, whisk cornstarch and sugar in a saucepan over medium heat. Gradually stir in champagne and cook until thickened.
  3. Gently fold in sliced strawberries. Pour the mixture into the cooled crust and bake for an additional 10-15 minutes until bubbly.
  4. Allow cooling at room temperature for about two hours before serving.
