  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ¾ cup whole milk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat softened butter until creamy. Gradually add sugar until light and fluffy.
  4. Add eggs one at a time to the butter mixture, mixing well after each addition. Then stir in milk and vanilla extract until smooth.
  5. Gradually combine the dry ingredients into the wet mixture until just mixed. Gently fold in diced strawberries.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean. Allow cooling before frosting.
