  • 1 cup mochiko (sweet rice flour)
  • 1/4 cup granulated sugar
  • 3/4 cup water
  • 8 fresh strawberries, hulled
  • Powdered sugar or cornstarch for dusting

Instructions

  1. In a large bowl, combine mochiko and granulated sugar. Gradually mix in water until smooth.
  2. Transfer the mixture to a microwave-safe bowl, cover loosely with plastic wrap, and microwave for 1 minute. Stir, then microwave for an additional 30 seconds. Repeat until sticky and translucent.
  3. Let the mochi cool slightly. While cooling, rinse and hull strawberries; slice larger ones if needed.
  4. Dust hands with powdered sugar or cornstarch. Take a golf ball-sized portion of mochi and flatten it into a disc. Place a strawberry in the center and fold the edges over to seal.
  5. Repeat until all strawberries are encased in mochi.
