- 1 cup heavy cream, chilled
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and grease lightly.
- Toss sliced strawberries with 2 tbsp of sugar; set aside.
- In a mixing bowl, beat eggs and remaining sugar until fluffy. Fold in sifted flour and baking powder.
- Spread batter in the prepared pan and bake for 12-15 minutes until golden brown. Cool slightly before removing from the pan.
- Whip mascarpone cheese with vanilla until smooth. In another bowl, whip heavy cream with powdered sugar until soft peaks form. Fold whipped cream into mascarpone mixture.
- Once cake is cool, spread cheesecake filling evenly over it, layer with strawberries, and roll carefully using parchment paper as a guide.
- Wrap in plastic wrap and chill for at least one hour before slicing.
