  • 1 cup fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 8 oz mascarpone cheese, at room temperature
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup heavy cream, chilled
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and grease lightly.
  2. Toss sliced strawberries with 2 tbsp of sugar; set aside.
  3. In a mixing bowl, beat eggs and remaining sugar until fluffy. Fold in sifted flour and baking powder.
  4. Spread batter in the prepared pan and bake for 12-15 minutes until golden brown. Cool slightly before removing from the pan.
  5. Whip mascarpone cheese with vanilla until smooth. In another bowl, whip heavy cream with powdered sugar until soft peaks form. Fold whipped cream into mascarpone mixture.
  6. Once cake is cool, spread cheesecake filling evenly over it, layer with strawberries, and roll carefully using parchment paper as a guide.
  7. Wrap in plastic wrap and chill for at least one hour before slicing.
