- 1/2 lb Italian sausage (sweet or spicy)
- 1 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley (chopped)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1 cup diced bell peppers (any color)
- 2 cups marinara sauce
Instructions
- Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a large bowl, mix ground beef, Italian sausage, breadcrumbs, Parmesan cheese, parsley, salt, and pepper until well combined.
- In another bowl, combine mozzarella cheese and diced bell peppers for the filling.
- Shape half of the meat mixture into a rectangle on parchment paper. Add the cheesy filling in the center and fold over the meat mixture to encase it tightly.
- Place the meatloaf in the baking dish, top with marinara sauce, and bake for about 60 minutes or until internal temperature reaches 160°F (71°C).
- Allow resting for 10 minutes before slicing and serving.
