- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced

- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut off the tops of the bell peppers and scoop out seeds.
- In a skillet over medium heat, sauté onion and garlic until golden.
- Add ground turkey or beef; cook until browned.
- Stir in rice, diced tomatoes, cumin, paprika, salt, and pepper until combined.
- Stuff each pepper with the meat-rice mixture.
- Place stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes.
- Remove foil, top with cheese, and bake uncovered for an additional 10-15 minutes until golden.
