Description

  • 12 jumbo pasta shells
  • 1 cup whole milk ricotta cheese
  • 1 cup fresh baby spinach, chopped
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to boil. Cook the pasta shells until al dente, about 8-10 minutes. Drain and set aside.
  3. In a bowl, combine ricotta, chopped spinach, half of the Parmesan cheese, oregano, salt, and pepper. Mix well.
  4. Stuff each shell with about two tablespoons of the cheese mixture.
  5. Spread half of the marinara sauce in a baking dish, arrange stuffed shells on top, then cover with remaining sauce and sprinkle with leftover Parmesan.
  6. Cover with foil and bake for 25 minutes; remove foil for an additional 5 minutes until golden.
