  • 1 cup mashed sweet potatoes
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Prick sweet potatoes with a fork and bake for about 45 minutes until tender. Let them cool before mashing.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix mashed sweet potatoes, eggs, oil, and vanilla until smooth.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Pour batter into a greased loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
