Instructions
- Preheat your oven to 400°F (200°C). Prick sweet potatoes with a fork and bake for about 45 minutes until tender. Let them cool before mashing.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix mashed sweet potatoes, eggs, oil, and vanilla until smooth.
- Gently fold dry ingredients into wet ingredients until just combined.
- Pour batter into a greased loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
