Description

  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup heavy cream (whipped)
  • 2 tbsp cocoa powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a jelly roll pan with nonstick spray.
  2. In a large bowl, whisk eggs and sugar until light and fluffy (about 5 minutes). Add vanilla extract.
  3. Sift in flour and baking powder, folding gently until just combined.
  4. Pour batter into the prepared pan, spreading evenly. Bake for 12-15 minutes or until golden brown.
  5. Let cool in the pan for 5 minutes, then transfer to a powdered sugar-dusted kitchen towel.
  6. Spread whipped cream over the sponge cake, roll it up from one short end using the towel as assistance, and refrigerate for at least an hour before slicing.
