  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream

Instructions

  1. Cook the rice according to package instructions. Set aside.

  3. Add taco seasoning and ½ cup water to the skillet, stirring well; simmer for 5 minutes.
