Description

Ingredients

  • 24 ladyfingers
  • 1 cup espresso or strong coffee (cooled)
  • 8 oz mascarpone cheese
  • ½ cup granulated sugar
  • 4 large eggs (room temperature)
  • 2 tbsp cocoa powder

Instructions

  1. Brew the espresso and allow it to cool slightly.
  2. In a bowl, whisk egg yolks with sugar until creamy. Mix in mascarpone until smooth.
  3. In another bowl, whip egg whites to stiff peaks and gently fold into the mascarpone mixture.
  4. Dip each ladyfinger briefly into the cooled coffee and layer them in your dish. Spread half of the cream mixture over the first layer.
  5. Repeat with another layer of dipped ladyfingers and the remaining cream mixture.
  6. Refrigerate for at least four hours or overnight for best flavor. Dust with cocoa powder before serving.
