  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, espresso powder, and salt.
  3. In another bowl, cream the softened butter with remaining sugar until light and fluffy.
  4. Add eggs one at a time along with vanilla extract; mix until smooth.
  5. Gradually add dry ingredients to the wet mixture, alternating with milk until just combined.
  6. Fill each cupcake liner two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  7. For frosting, beat mascarpone cheese with heavy cream until stiff peaks form. Gradually add powdered sugar.
