- 1 cup chopped kale or cabbage
- 4 tbsp unsalted butter (divided)

- ¼ cup chopped green onions

Instructions
- Peel and chop the potatoes into even chunks. Boil in salted water for 15-20 minutes until tender.
- While potatoes boil, heat 1 tablespoon of butter in a skillet. Sauté chopped kale or cabbage for about 5 minutes until wilted.
- Drain the cooked potatoes and return them to the pot. Add 3 tablespoons of butter and milk; mash until smooth yet fluffy.
- Stir in the sautéed greens and green onions. Season with salt and pepper to taste.
- Serve warm, optionally topped with an extra pat of butter.
