  • 8 oz squid ink pasta
  • 1 lb fresh shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil a large pot of salted water; cook squid ink pasta for 8-10 minutes until al dente. Drain, reserving some pasta water.
  2. In a skillet over medium heat, warm olive oil. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Toss in shrimp and sprinkle with red pepper flakes; cook until shrimp turn pink and opaque (about 3-4 minutes).
  4. Add the drained pasta to the skillet with shrimp and garlic. Mix well, adding reserved pasta water gradually for desired sauce consistency.
  5. Remove from heat; garnish with fresh parsley and serve hot.
