Ingredients

  • 8 small corn tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 ripe avocado, sliced
  • 2 tbsp lime juice (freshly squeezed)
  • For the cashew cream: 1 cup raw cashews (soaked overnight)
  • 2 tbsp lime juice
  • Pinch of salt

Instructions

  1. Warm corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  2. In the same skillet, add a splash of oil and sauté diced red bell pepper until tender (about 5 minutes).
  3. Add rinsed black beans to the skillet with sautéed veggies; season with salt, pepper, cumin, and chili powder. Cook for another 3 minutes.
  4. Blend soaked cashews with lime juice and salt until smooth; adjust consistency with water if needed.
  5. Assemble tacos by filling tortillas with bean-veggie mixture, drizzling with cashew cream, and topping with avocado slices.
  6. Serve immediately and enjoy!
