  • 1 pound bone-in beef brisket
  • 8 cups water
  • 8 oz flat rice noodles (Bánh phở)
  • 1 medium onion, charred
  • 1 thumb-sized piece of ginger, sliced and charred
  • 2 star anise pods
  • 2 whole cloves
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • Fresh basil leaves, cilantro, and mint for garnish
  • Lime wedges for serving
  • Sriracha or Hoisin sauce for flavor

Instructions

  1. 1. Prepare the broth: Place the beef brisket in a large pot with water. Bring to a boil over medium-high heat, then reduce to a simmer.
  2. 2. Char the aromatics: While the brisket simmers, char the onion and ginger until browned on an open flame or skillet.
  3. 3. Add spices: Incorporate charred onion, ginger, star anise, cloves, cinnamon stick, and fish sauce into the pot. Simmer for about two hours.
  4. 4. Cook noodles: Prepare rice noodles according to package instructions. Drain and set aside.
  5. 5. Assemble bowls: Thinly slice brisket against the grain after removing it from the pot. Place cooked noodles in bowls and ladle hot broth over them before adding brisket slices.
  6. 6. Garnish & serve: Top each bowl with fresh herbs, lime wedges, and drizzle with Sriracha or Hoisin sauce as desired.
