  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of the pan.
  3. Melt white chocolate in short bursts in the microwave until smooth.
  4. In a separate bowl, beat cream cheese and sugar until fluffy; add eggs one at a time, mixing well after each addition.
  5. Stir in melted white chocolate, sour cream, and vanilla until combined.
  6. Gently fold in half of the raspberries into the batter. Pour over the crust and drop remaining raspberries on top, swirling gently.
  7. Bake for 60-70 minutes until slightly jiggly in the center. Cool at room temperature then refrigerate for at least four hours before serving.
