  • 2 cups low-sodium vegetable or chicken broth
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse wild rice under cold water until clear.
  2. In a large saucepan, heat olive oil over medium heat. Sauté onion, carrot, and celery for about 5 minutes until softened.
  3. Add minced garlic and sauté for an additional minute.
  4. Stir in the rinsed wild rice and broth; bring to a boil. Reduce heat to low, cover, and simmer for 45-60 minutes until the rice is tender.
  5. After cooking, stir in thyme, salt, and pepper. Fluff with a fork before serving.
