  • 34 boneless, skinless chicken breasts (approx. 1 lb)
  • 1 medium butternut squash, peeled and diced (about 3 cups)
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 3 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and dice the butternut squash.
  2. In a bowl, toss the diced squash with olive oil, salt, pepper, and thyme.
  3. Spread the seasoned squash on a baking sheet and roast for about 25 minutes until tender.
  4. In a skillet over medium heat, add olive oil and season chicken breasts with salt and pepper. Cook until golden brown, about 6-7 minutes per side.
  5. Remove the chicken; add onions and garlic to the skillet. Sauté until fragrant.
  6. Stir in cooked orzo, roasted squash, spinach, and chicken broth. Simmer for about 5 minutes until heated through.
