  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 fresh jalapenos, thinly sliced
  • ½ cup red onion, finely chopped
  • 2 celery stalks, chopped
  • ½ cup mayonnaise (or Greek yogurt)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tsp chili powder

Instructions

  1. Preheat the oven to 375°F (190°C). Place the chicken breasts on a lined baking sheet and season with salt and pepper. Bake for 25-30 minutes until cooked through.
  2. While the chicken cooks, chop the jalapenos, red onion, and celery into bite-sized pieces.
  3. Once baked, cool the chicken slightly before shredding it with two forks.
  4. In a large bowl, combine shredded chicken, chopped veggies, mayonnaise (or yogurt), lime juice, and chili powder. Stir until well mixed.
  5. Season with additional salt and pepper if needed. Cover and chill in the refrigerator for at least an hour before serving.
