  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup frozen spinach, thawed and drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick spray. Season chicken with salt and pepper.
  2. In a skillet over medium heat, heat olive oil. Cook chicken for about 5-7 minutes on each side until golden brown. Remove from heat and let cool slightly.
  3. In a bowl, mix cream cheese, sour cream, garlic, spinach, artichokes, mozzarella cheese, and half of the Parmesan until well combined.
  4. Place cooked chicken in the baking dish. Spread the spinach-artichoke mixture on top and sprinkle with remaining Parmesan.
  5. Bake for 20-25 minutes until bubbly and golden brown. Serve warm.
