  • 8 oz whole grain pasta
  • 2 cups fresh basil leaves
  • 1/3 cup pine nuts (lightly toasted)
  • 3 cloves garlic (minced)
  • 1/2 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 8 oz smoked tofu (cubed)

Instructions

  1. Cook the whole grain pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a dry skillet, toast pine nuts over medium heat until golden brown, about 5 minutes.
  3. In a food processor, blend fresh basil leaves, toasted pine nuts, minced garlic, olive oil, lemon juice, and salt until desired consistency is reached.
  4. Sauté cubed smoked tofu in a separate pan over medium heat until heated through and slightly crispy, about 5 minutes.
  5. Combine cooked pasta with pesto sauce in a large bowl and gently fold in sautéed tofu until well coated.
  6. Serve warm with additional pine nuts or fresh basil as desired.
