Ingredients
  

For the Pasta
  • 12 oz Penne pasta or any pasta of your choice
For the Sausage and Vegetables
  • 1 lb Smoked sausage sliced into rounds
  • 1 medium Yellow onion diced
  • 1 medium Red bell pepper sliced
  • 1 medium Green bell pepper sliced
  • 3 cloves Garlic minced
For the Sauce
  • 1 cup Heavy cream for a rich sauce
  • 1 cup Chicken broth low sodium recommended
  • 2 tbsp Cajun seasoning adjust to taste
  • 1 tbsp Olive oil for sautéing
  • 1 cup Parmesan cheese grated, for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
  2. Once cooked, drain the pasta in a colander and set aside. Do not rinse, as this will wash away the starch that helps the sauce adhere.
Sauté the Sausage and Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. This adds flavor and texture.
  2. Add the diced onion, sliced bell peppers, and minced garlic to the skillet. Sauté for an additional 5-7 minutes until the vegetables are softened and fragrant.
Prepare the Sauce
  1. Pour in the chicken broth and heavy cream into the skillet with the sausage and vegetables. Stir to combine.
  2. Add the Cajun seasoning, salt, and black pepper. Stir well and let the mixture simmer for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Combine and Serve
  1. Add the cooked pasta to the skillet and toss to coat the pasta in the sauce. Cook for an additional 2-3 minutes to heat through.
  2. Serve hot, garnished with grated Parmesan cheese and additional Cajun seasoning if desired.

Notes

Feel free to adjust the spice level by adding more or less Cajun seasoning. You can also add vegetables like spinach or mushrooms for extra nutrition.
