Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to an even thickness for even cooking
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper for seasoning
  • 2 tablespoons olive oil for cooking
For the Topping
  • 8 ounces fresh mozzarella cheese sliced
  • 2 large ripe tomatoes sliced
  • 1 cup fresh basil leaves washed and dried
  • 1 tablespoon balsamic glaze for drizzling

Method
 

Prepare the Chicken
  1. Preheat your skillet over medium heat. This ensures even cooking and helps to achieve a nice sear on the chicken.
  2. While the skillet is heating, season both sides of the chicken breasts with salt and black pepper. This enhances the flavor of the chicken.
  3. Add olive oil to the skillet. Once the oil is shimmering, carefully place the chicken breasts in the skillet.
  4. Cook the chicken for about 6-7 minutes on one side without moving it. This allows a golden crust to form.
  5. Flip the chicken breasts using tongs and cook for another 6-7 minutes on the other side until the internal temperature reaches 165°F (75°C).
  6. Once cooked, remove the chicken from the skillet and let it rest for 5 minutes. This helps the juices redistribute, keeping the chicken moist.
Assemble the Caprese Topping
  1. On each chicken breast, layer slices of fresh mozzarella and tomatoes. Start with mozzarella, followed by tomatoes, and then top with fresh basil leaves.
  2. Cover the skillet with a lid for 2-3 minutes to allow the cheese to melt slightly. This creates a deliciously gooey topping.
  3. Once the cheese has melted, carefully transfer the chicken to a serving platter.
  4. Drizzle balsamic glaze over the top of the chicken for a tangy finish that complements the flavors.
