Prepare the Chicken
- Preheat your skillet over medium heat. This ensures even cooking and helps to achieve a nice sear on the chicken.
- While the skillet is heating, season both sides of the chicken breasts with salt and black pepper. This enhances the flavor of the chicken.
- Add olive oil to the skillet. Once the oil is shimmering, carefully place the chicken breasts in the skillet.
- Cook the chicken for about 6-7 minutes on one side without moving it. This allows a golden crust to form.
- Flip the chicken breasts using tongs and cook for another 6-7 minutes on the other side until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the skillet and let it rest for 5 minutes. This helps the juices redistribute, keeping the chicken moist.

- On each chicken breast, layer slices of fresh mozzarella and tomatoes. Start with mozzarella, followed by tomatoes, and then top with fresh basil leaves.
- Cover the skillet with a lid for 2-3 minutes to allow the cheese to melt slightly. This creates a deliciously gooey topping.
- Once the cheese has melted, carefully transfer the chicken to a serving platter.
- Drizzle balsamic glaze over the top of the chicken for a tangy finish that complements the flavors.
