Ingredients
  

For the Marinade
  • 1 cup honey preferably raw for better flavor
  • 2 tablespoons chipotle peppers in adobo sauce finely chopped
  • 2 tablespoons soy sauce low sodium recommended
  • 1 tablespoon olive oil extra virgin for flavor
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin for warmth
  • 1 teaspoon smoked paprika adds smokiness
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
For the Chicken
  • 4 pieces boneless, skinless chicken breasts about 6-8 ounces each
For Garnish
  • 1/4 cup fresh cilantro chopped

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine honey, chopped chipotle peppers, soy sauce, olive oil, minced garlic, ground cumin, smoked paprika, salt, and black pepper.
  2. Whisk the mixture until well combined. This will ensure that the flavors meld together and the marinade coats the chicken evenly.
Marinate the Chicken
  1. Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  2. Pour the marinade over the chicken, ensuring each piece is well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Cook the Chicken
  1. Preheat your grill to medium-high heat (about 375°F or 190°C). If using an oven, preheat to 400°F (200°C).
  2. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade to avoid cross-contamination.
  3. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a baking tray and cook for 25-30 minutes.
  4. Let the chicken rest for 5 minutes after cooking. This allows the juices to redistribute, ensuring moist chicken.
Serve
  1. Slice the chicken and serve it garnished with chopped cilantro and lime wedges on the side.

Notes
