Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter softened to room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Frosting
  • 8 oz cream cheese softened to room temperature
  • 1/2 cup unsalted butter softened to room temperature
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract
For the Fruit Topping
  • 1 cup strawberries sliced
  • 1 cup kiwi peeled and sliced
  • 1 cup blueberries
  • 1 cup banana sliced

Method
 

Prepare the Cookie Base
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes. This incorporates air into the mixture, making the cookies soft.
  3. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  4. In a separate bowl, whisk together the sifted flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Overmixing can lead to tough cookies.
  5. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, which is fine as they will firm up while cooling.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Make the Frosting
  1. In a mixing bowl, beat together the softened cream cheese and butter using an electric mixer until smooth and creamy.
  2. Gradually add the sifted powdered sugar and vanilla extract, mixing until well combined and fluffy. This will create a sweet, creamy frosting that pairs perfectly with the cookies.

  1. Once the cookies are completely cool, spread a generous layer of frosting on top of each cookie using a spatula.
