Garlic Butter Shrimp Pasta

Ingredients
  

For the Pasta
  • 12 oz spaghetti or your choice of pasta
  • 1 tbsp salt for pasta water
For the Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil for sautéing
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
For the Garlic Butter Sauce
  • 6 tbsp unsalted butter divided
  • 6 cloves garlic minced
  • 1/4 cup dry white wine or chicken broth
  • 1/4 cup fresh parsley chopped, for garnish
  • 1/2 cup Parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
  2. Once cooked, reserve 1 cup of pasta water, then drain the pasta in a colander. Set aside.
Prepare the Shrimp
  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and sauté for about 2-3 minutes on each side until they turn pink and opaque.
  2. Remove the shrimp from the skillet and set aside on a plate.
Make the Garlic Butter Sauce
  1. In the same skillet, reduce the heat to medium and add 4 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  2. Pour in the white wine (or chicken broth) and let it simmer for about 2-3 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.
Combine Everything
  1. Add the cooked shrimp back into the skillet along with the drained spaghetti. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
  2. Stir in the remaining 2 tablespoons of butter until melted and well combined. Adjust seasoning with more salt and pepper if needed.
  3. Serve immediately, garnished with chopped parsley and grated Parmesan cheese.

Notes

For added flavor, you can include red pepper flakes for a spicy kick. Ensure shrimp are cooked just until opaque to avoid overcooking.
