Ingredients

For the Slaw
  • 4 cups green cabbage shredded
  • 1 cup carrot shredded or grated
  • 1 cup red cabbage shredded
  • 1/2 cup green onions sliced
For the Dressing
  • 1/2 cup mayonnaise preferably full-fat for creaminess
  • 2 tablespoons apple cider vinegar for tanginess
  • 1 tablespoon sugar to balance flavors
  • 1 teaspoon Dijon mustard for a hint of spice
  • 1/2 teaspoon celery seed optional, for added flavor
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground, to taste

Method

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, grated carrot, and sliced green onions. Toss them together gently to mix evenly.
  2. Use a sharp knife and cutting board to finely shred the cabbages and grate the carrot. This ensures that the vegetables are tender and easy to eat.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and black pepper until smooth. This dressing will coat the vegetables and add flavor.
  2. Taste the dressing and adjust the seasoning if necessary, adding more salt or pepper to suit your preference.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until all the vegetables are evenly coated. This step is crucial as it ensures every bite is flavorful.
  2. Cover the coleslaw and let it sit in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together and the cabbage to soften slightly.
  3. Serve chilled as a side dish or topping for sandwiches and burgers.

Notes

For best results, prepare the coleslaw a few hours in advance or the night before to allow the flavors to develop. You can also add other ingredients like diced apples or raisins for a sweet twist.
