Prepare the Crust
- Preheat your oven to 350°F (175°C). This ensures the bars bake evenly and helps set the crust properly.
- In a mixing bowl, combine 1 cup of sifted all-purpose flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Mix these dry ingredients together to ensure even distribution.
- Add 1/2 cup of softened unsalted butter to the dry mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs. This will create a flaky texture for the crust.
- Press the mixture firmly into the bottom of a 9x9 inch baking pan to form an even layer. Make sure to pack it down well to prevent it from crumbling during baking.
- Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden. Keep an eye on it to avoid over-baking.
Prepare the Filling
- While the crust is baking, prepare the filling. In a clean mixing bowl, whisk together 1 cup of granulated sugar and 2 large eggs until well combined and slightly frothy. This incorporates air, which helps the filling rise.
- Add 1/4 cup of fresh lemon juice, 1 tablespoon of lemon zest, and 1 tablespoon of culinary lavender to the egg mixture. Whisk until fully combined. The lavender will infuse the filling with a delightful floral flavor.
- Sift in 1/4 cup of all-purpose flour and 1/4 teaspoon of salt. Gently fold the mixture using a rubber spatula until just combined. Be careful not to overmix, as this can make the filling dense.
- Once the crust is done baking, remove it from the oven and pour the lemon-lavender filling over the hot crust. This helps the filling set better.
- Return the pan to the oven and bake for an additional 15-20 minutes, or until the filling is set and slightly firm to the touch. A toothpick inserted in the center should come out clean.
Cool and Serve
- Remove the baking pan from the oven and allow the bars to cool completely in the pan on a wire rack. This helps the filling firm up further.
- Once cooled, dust the top with 2 tablespoons of powdered sugar for a beautiful finish.
- Cut into squares and serve. Enjoy the delightful combination of tart lemon and fragrant lavender!
